Georgian Meat Pies
based on this recipe

14 ounces flour
1/2 teaspoon of instant yeast (or so. Probably less.)
1 teaspoon salt
1/2 cup water
2 tablespoons oil

Combine the flour and salt. Mix. Add yeast. Add very warm, but not scalding, water to the flour. Add oil and 1/2 cup kefir. Mix. Keep adding kefir and mixing until the dough comes together. You want it to be neither so wet that it is sticky nor so dry that it is like a rock. Let sit, covered, in a warm place for about 6 hours. I specifically didn't add sugar, because I knew the pies would take a long time to cook, and I didn't want them to brown too quickly.

about 500 grams ground beef (about a pound)
1 teaspoon ground coriander
1 teaspoon salt
1/2 teaspoon pepper
2 chopped green onions

Combine ingredients for filling.

Divide the dough into four balls. Roll one ball out on a greased cutting board or some other appropriate surface. You'll want it to be pretty thin, but not so thin that it rips. Put about 1/4 of the meat on 1/2 the dough. Fold the dough to cover the meat, and then pinch the edges shut. I personally find that pinching really hard, until I have almost pushed completely through the dough, does an okay job. You might want to fold the edge and pinch again. Repeat with the other balls.

You can bake these or fry them. Remember that there is raw meat in there, so you'll want to cook them at a lowish temperature for at least half an hour and maybe more like 45 mintes.
